BBQ Chicken Stuffed Sweet Potatoes
BBQ Chicken Stuffed Sweet Potatoes are an easy, healthy, gluten-free, and dairy-free weeknight dinner recipe the whole family will enjoy!

- 2 lbs. sweet potatoes 4 total, about ½ pound each
- 2 Tbsp. oil olive or avocado
- 1 lb. chicken breasts pounded thin, cut into 4 pieces
- ¾ tsp. salt to taste
- ¼ tsp. black pepper
- ¾ cup BBQ sauce* original
- ½ red onion finely diced
- Salt and pepper to taste
Toppings:
- ½ cup diced red onion
- ¼ bunch cilantro finely chopped
- Cheese optional
- Pickled vegetables optional
To Bake Potatoes: Preheat oven to 400℉. Scrub the potatoes, pierce with a fork 7-8 times, and bake for 40-60 minutes, or until tender. To Microwave Potatoes: Pierce with a fork, place them on a microwave-safe plate, and microwave on high for 5-8 minutes per potato, turning halfway through.
In a large skillet over medium heat add oil and chicken breasts. Cook for 10-12 minutes total, flipping chicken halfway through cooking.
Once chicken is completely cooked, shred with a fork and add BBQ sauce. Stir until combined.
Serve BBQ chicken in cooked sweet potatoes with diced red onion, salt, pepper, cilantro, cheese, and relish. Enjoy!
