This Thai-inspired Cucumber Salad is so quick and easy to make as a simple side dish with big, bold Asian flavors! It's subtly sweet and a little spicy with crunchy nuts and red onions.

Cucumbers | Salt  Rice Vinegar | Soy Sauce Sesame Oil | Honey  Chili Garlic Paste  Ginger Paste | Red Onion Roasted Cashews

KEY INGREDIENTS

Add sliced cucumbers to a large bowl and sprinkle with salt. Let sit for 15 minutes. Pat dry with a paper towel.

INSTRUCTIONS

Whisk together the rice vinegar, soy sauce, sesame oil, honey, chili garlic paste, and ginger paste in a bowl. Pour over the dried cucumbers and toss until coated.

Add diced red onions and cashews. Toss to combine everything. Serve immediately or chill for two hours.
