KEY INGREDIENTS

Preheat the oven to 375°. Cook the sausage for 7-8 minutes and mash it into fine crumbles. Remove the sausage and drain on a paper towel-lined plate.

INSTRUCTIONS

Sauté onion and bell pepper for 3-4 minutes then add garlic and salt. Whisk together the eggs, milk, seasonings, and salt. Place hashbrowns in a baking dish. Top with the sausage and vegetables. Pour the egg mixture over everything and then sprinkle with the shredded cheese.

Cover the dish with aluminum and bake for 50-55 minutes. When there's 20 minutes left remove the foil. Allow the casserole to rest for 5-10 minutes. Serve with cilantro or parsely.
