Creamy Tomato Basil Bisque

This creamy, homemade Tomato Basil Bisque is the best recipe to warm you up all Fall long. Canned or fresh tomatoes are simmered with broth and savory veggies like celery, carrots, and onions the puréed for a thick and hearty soup.

Ingredients

  • 2 Tbsp. oil avocado or olive
  • 1 cup sweet onion finely diced
  • 2 carrots peeled and diced
  • 2 ribs celery finely diced
  • 4 cloves garlic finely minced
  • 28 oz. can peeled whole tomatoes with juice
  • 3 cups chicken broth
  • 2 tsp. sugar optional
  • 1 tsp. oregano dried
  • 1 tsp. salt to taste
  • ¼ tsp. black pepper to taste
  • ¼-½ tsp. red pepper flakes optional
  • 1 cup milk or heavy cream
  • 3 Tbsp. cornstarch
  • ½ cup fresh basil finely chopped

Instructions

  1. Add oil, onions, carrots, and celery to a large pot or Dutch oven over medium heat and saute for 3-4 minutes. Once the vegetables have softened, add in the minced garlic and continue sauteing for an additional 30 seconds, or until it becomes fragrant.
  2. Add in the tomatoes, broth, sugar, oregano, salt, and peppers. Bring to a boil then reduce to low and simmer for 25-30 minutes.
  3. Warm up the milk in the microwave and whisk in the cornstarch until smooth.
  4. Once the soup has simmered, pour in the cornstarch slurry and add in the chopped basil. Use an immersion blender and blend the soup until completely smooth. Alternatively you can carefully add it to a high-speed blender or work in batches and puree in a food processor.
  5. Simmer the soup for an additional 5 minutes, or until it has thickened up slightly.
  6. Serve with a drizzle of milk or heavy cream and additional basil. Enjoy!*
