Instant Pot CORNED BEEF AND CABBGE 

The classic Irish-American dish is getting a fast and easy makeover in this Instant Pot Corned Beef and Cabbage recipe! Cured corned beef brisket is pressure cooked with cabbage, potatoes, and carrots.

KEY INGREDIENTS

Water | Garlic Apple Cider Vinegar Corned Beef Sweet Onion | Sugar Pickling Spice Red Potatoes Carrots Cabbage Salt and Pepper

Pour water into pot and whisk in garlic, sugar, and vinegar.  Rinse corned beef and add to pot, fat side down. Tuck in the quartered onion and sprinkle the pickling spices on top. 

FILL POT

Seal lid and cook on HIGH pressure for 80 minutes. Quick release pressure.  Meanwhile, cut potatoes into  1-inch chunks, peeling and cutting carrots into 1-2" pieces, and cutting cabbage into 3-inch wedges. 

CUT VEGGIES

Remove beef from pot and add in potatoes, carrots, and cabbage. Place the beef back on top of the vegetables. Seal lid again. Cook for 2 more minutes on High pressure. Quick release pressure.  Cut against grain for serving. Enjoy!
