CORNED BEEF HASH AND EGGS

Corned Beef Hash is a classic recipe perfect for St. Patrick's Day! Shredded corned beef, diced potatoes, and over-easy eggs come together in a skillet and taste so much better than the canned kind. 

KEY INGREDIENTS

Olive Oil | Butter Red Bell Pepper Sweet Onion Garlic | Paprika Yukon Gold Potatoes Oregano | Corned Beef Eggs | Salt | Pepper Parsley

Add butter and oil to to a cast-iron skillet over medium heat along with chopped bell pepper and onion. Sauté for 3-4 minutes. Add garlic and continue sautéing for another 1-2 minutes. 

SAUTÉ

Push veggies to the side of the skillet and add more butter. Add cubed potatoes and corned beef. Mix until well combined. Cook for 10 minutes, stirring occasionally.  Add seasonings and stir veggies, potatoes, and beef together. 

BEEF AND POTATOES

Make 5 wells in the hash. Drizzle olive oil in them and crack one egg in each well. Sprinkle eggs with remaining salt and pepper. Cover skillet and reduce heat. Cook for 7-8 minutes. Serve with a sprinkle of fresh parsley and enjoy!
