Cilantro Lime Cauliflower Rice Recipe

Cilantro Lime Cauliflower Rice is a quick and healthy recipe to get that Chipotle favorite at home. Simply sauté riced cauliflower with onion, garlic, cilantro, and lime, and you have a delicious side in under 15 minutes.

Ingredients

  • 2 Tbsp. oil
  • 1 cup white onion finely diced
  • 2 cloves garlic finely minced
  • 4 cups cauliflower rice about 1 lb.
  • 1 tsp. salt to taste
  • ¼ tsp. black pepper
  • 1 Tbsp. lime juice freshly squeezed
  • 1 tsp. lime zest
  • ½ cup cilantro finely chopped

Instructions

  1. Add oil and diced onion to a large skillet and cook for 2-3 minutes over medium heat. Mix in the garlic and continue sautéing for an additional 30 seconds.
  2. Add the cauliflower rice, salt, and pepper. Continue cooking over medium heat for 6-8 minutes, stirring occasionally.
  3. Before serving, stir in the lime juice, zest, and cilantro. Enjoy!

Meal Prep and Storage

  • To Prep-Ahead: You can easily rice the cauliflower the day before, just keep it in the fridge until you're ready to use. Chop the onions, garlic, and cilantro ahead of time, as well.
  • To Store: Keep leftovers in an airtight container in the refrigerator for up to 4 to 5 days.
  • To Freeze: Use freezer-safe bags to store individual-sized portions in the freezer for up to 6 months.
  • To Reheat: For best results, warm up this cauli rice in a skillet on the stove. If you're in a hurry, you can use the microwave.
