  • 1 ½ cups pineapple fresh
  • ½ cup coconut milk* regular or lite
  • ¼ cup coconut cream
  • 3 oz. rum white, silver, or light
  • 1 Tbsp. sugar optional
  • ¼-½ cup ice


  1. Cut fresh pineapple into 1-inch chunks.* Place in a 1-gallon ziplock bag and freeze in a single layer for 2-3 hours.
  2. Add frozen pineapple chunks, coconut milk, coconut cream, rum, and sugar to a large food processor or high-speed blender, such as a Vitamix.

  3. Blend for about 1-2 minutes or until pineapple is completely smooth.
  4. Add ice and pulse until well incorporated.
  5. Serve immediately with a pineapple wedge, straw, and a maraschino cherry or freeze until ready to serve.

  6. If freezing, let it sit at room temperature for 20-30 minutes and then blend it just before serving. Enjoy!
