Ingredients

  • 2 lbs. cherry tomatoes or grape, cut in half
  • 2 Tbsp. olive oil
  • 4-6 cloves garlic crushed
  • 1 tsp. salt
  • ½ tsp. black pepper
  • Fresh herbs optional

Instructions

  1. Preheat oven to 400 degrees.
  2. Toss together tomatoes, oil, crushed garlic, salt, and pepper in a large bowl until tomatoes are well coated.
  3. Place tomatoes on a large baking sheet in a single layer.
  4. Roast tomatoes for 20-25 minutes or until the skin begins to shrivel.
  5. Serve with additional herbs, if desired, with toasted bread, pesto pasta, or on grilled chicken and enjoy!
