Peach Sherbet with Maple Candied Pecans

A healthy peach sherbet recipe that is made with Greek yogurt and topped with pecans sweetened with maple syrup.

Ingredients

  • 2 c peaches frozen and thawed for 30 minutes
  • 1/4 c Greek yogurt plain (can also use vegan yogurt)
  • 2 T maple syrup
  • 1 T lime juice
  • 1/3 c pecans coarsely chopped
  • 1 t olive oil
  • 2 t maple syrup
  • 1 pinch salt

Instructions

  • Preheat oven to 325 degrees.
  • Place slightly thawed peaches, yogurt, maple syrup and lime juice in a food processor or blender.
  • Process for at least 2 minutes, scraping down the sides of the bowl every 30 seconds. Process until mixture is completely smooth.
  • Fill a 9 x 5 inch loaf pan with the mixture and freeze for 15 minutes before serving. Do not freeze for more than about 30 minutes or the sherbet will become icy and not smooth.

For the Pecans:

  • In a small bowl combine the pecans, olive oil, 2 t. maple syrup and salt. Place on a baking sheet and roast in the preheated oven for 5-8 minutes, or until pecans are toasted. Watch them closely so they do not burn.
  • Serve peach sherbet with toasted pecans and drizzle additional maple syrup on top, if desired. Enjoy!
