Strawberry Shortcake Overnight Oats are a healthy and easy breakfast recipe for those weekdays when you are on the go! All you need is a Mason jar filled with fresh strawberries, rolled oats, milk and sweetener of your choice, and chia seeds prepped the night before.

Ingredients

  • cup strawberries fresh or frozen
  • ½ cup oats old-fashioned, rolled, gluten-free if needed
  • 1 tsp. chia seeds
  • ½ cup milk oat, soy, or nut-based milk
  • 2 Tbsp. pure maple syrup or honey

Instructions

  • Add the diced strawberries to an 8-oz. glass Mason jar. Microwave for 60 seconds, or until the strawberries are soft and jam-like.
  • Add the oats, chia seeds, milk, and sweetener to the jar. Stir the oats with the liquid until well combined.
  • Refrigerate for at least 4 hours or up to overnight. Serve with additional fresh berries.

Notes

Meal Prep & Storage

    • To prep and store: The beauty of this dish is how easy it is to whip up the day before. It will keep for up to 3 to 4 days in the fridge, but it is best enjoyed within 24 hours. After this time, it will start to get mushy. You can, however, combine everything except for the milk, then add that the night before serving to ensure a fresh and creamy oatmeal.
    • To freeze: Freezing is not recommended as the texture won't be the same. It will get too watery.
