Easy Mexican Rice

This Mexican Rice is prepared speedy quick in the rice cooker.

Ingredients

Seasoning Mix

  • 1 t cumin
  • 1 t salt
  • ½ t pepper
  • 1/8 t cayenne pepper
  • ¼ t garlic powder
  • 1 c sweet kernel corn canned
  • 3 T sour cream
  • ½ c chopped green onions optional

Instructions

  • Place rice, water, salsa and butter in a rice cooker. In a separate bowl combine seasoning ingredients (cumin, salt, pepper, cayenne pepper, and garlic powder) and mix well.
  • Add seasoning ingredients to the rice cooker and sitr until well combined.
  • Turn rice cooker on and cook rice until done.
  • Once rice is completely cooked, add in corn and sour cream and let sit 5 minutes before serving.
  • Top with green onions if desired and enjoy!
