Southwest Pasta Salad
Canned corn, beans, salsa and ranch dressing make this super simple to throw together. You can serve this as a side dish, for lunch, or add some chicken and make it an entree for dinner.

- 8 oz spiral pasta gluten free, cooked
- 1 c canned kernel corn
- 1 c canned black beans rinsed
- 1 ½ c cherry tomatoes ,cut in half
- ½ c green onions + extra
- ¾ c peppercorn ranch dressing gluten free
- ¾ c salsa
- ½ t salt
- ½ t pepper
After you have cooked your pasta according to the package directions, wait until it has cooled to mix with the remaining ingredients.
In a medium bowl, combine ranch dressing, salsa, salt and pepper. Mix well.
Place pasta in a large bowl and stir in ¾ of the ranch/salsa dressing. (If you are serving immediately, this is probably all you need. If you are refrigerating, reserve the remaining ¼ and mix in just prior to serving. The pasta tends to soak up a lot of the dressing while refrigerating.)
Add corn, black beans, tomatoes and green onions. Toss until well combined.
Refrigerate for at least 2 hours before serving. Garnish with extra green onions if desired. Enjoy!
