Pistachio Crusted Halibut

This crunchy halibut is topped with a pistachio crust.

Ingredients

  • 1 ½ lb. halibut cut into 4 fillets
  • Extra salt & pepper for seasoning fillets
  • 1 T. olive oil
  • 1 T. butter softened and slightly melted
  • ½ c. pistachios unroasted
  • 1/4 c. cornmeal gluten free
  • ¼ t. salt
  • ¼ t. pepper
  • ¼ t. garlic crushed

Instructions

  • Pulse butter, pistachios, cornmeal, ¼ t. salt and pepper, and garlic in a food processor until mixture is well combined.
  • Cut halibut into 4-6 oz. pieces.
  • Salt and pepper both sides of halibut fillets.
  • Place olive in an oven safe skillet and heat to medium.
  • Sear fillets on one side in skillet, flip, and then place equal amounts of pistachio crumb on top of each piece of fish.
  • Bake in oven at 375 degrees for 10-12 minutes or until fish flakes easily with a fork.
  • This Pistachio Halibut is great serve with Butternut Squash Sage Risotto!
