Pistachio Crusted Halibut
This crunchy halibut is topped with a pistachio crust.

- 1 ½ lb. halibut cut into 4 fillets
- Extra salt & pepper for seasoning fillets
- 1 T. olive oil
- 1 T. butter softened and slightly melted
- ½ c. pistachios unroasted
- 1/4 c. cornmeal gluten free
- ¼ t. salt
- ¼ t. pepper
- ¼ t. garlic crushed
Pulse butter, pistachios, cornmeal, ¼ t. salt and pepper, and garlic in a food processor until mixture is well combined.
Cut halibut into 4-6 oz. pieces.
Salt and pepper both sides of halibut fillets.
Place olive in an oven safe skillet and heat to medium.
Sear fillets on one side in skillet, flip, and then place equal amounts of pistachio crumb on top of each piece of fish.
Bake in oven at 375 degrees for 10-12 minutes or until fish flakes easily with a fork.
This Pistachio Halibut is great serve with Butternut Squash Sage Risotto!
