Snickerdoodle Cookie Dough Bites

Ingredients

For Rolling:

  • 2 Tbsp. cane sugar or coconut sugar
  • ¾ tsp. cinnamon

Snickerdoodle Bites:

  • 1 cup raw cashews soaked in water for 30 minutes
  • 1/3 cup honey or maple syrup
  • 2 Tbsp. coconut oil melted
  • 2 ¼ c. quick cooking oats gluten-free
  • 1 tsp. vanilla
  • ¼ tsp. salt
  • ½ tsp. cinnamon

Instructions

  1. In a shallow bowl combine cane or coconut sugar and ¾ teaspoon cinnamon and toss until evenly mixed. Set aside until ready to use.
  2. In the bowl of a food processor combine soaked cashews, honey, and coconut oil. Process for 2-3 minutes or until cashews become smooth.
  3. Add oats, vanilla, salt, and ½ teaspoon cinnamon. Continue processing for another 1-2 minutes, scraping the sides of the bowl every 20-30 seconds to ensure even mixing.
  4. Once “cookie dough” is an even consistency and begins to stick together in the bowl, roll 1 ½ - 2-tablespoons of dough into a ball. Roll ball in cinnamon sugar mixture. Repeat with remaining “cookie dough.”
  5. Serve snickerdoodle bites immediately or keep in an airtight container for up to 5-7 days.
