Skillet Bruschetta Chicken and Asparagus | Whole 30

Healthy, low-carb, and Whole 30-approved Bruschetta Chicken and Asparagus is made in one skillet and tastes incredible! In under 30 minutes you will have a restaurant-quality dinner ready and on your table with minimal effort and clean-up.

  • 1 lb. chicken breasts pounded to 1-inch thick and cut into four 4-oz. portions
  • ¼ tsp. garlic powder
  • ½ tsp. salt
  • 1/8 tsp. pepper
  • ½ tsp. Italian seasonings
  • 2-3 Tbsp. olive oil divided
  • 1 bunch asparagus ends trimmed, cut into 2-inch pieces
  • ¼ tsp. salt

Bruschetta Topping:

  • 2 cups vine-ripened tomatoes finely diced
  • ¼ cup red onion finely chopped
  • ¼ cup basil finely chopped
  • 1 Tbsp. olive oil
  • ¼ tsp. salt
  • 2 Tbsp. balsamic reduction or 1 Tbsp. balsamic vinegar + 1 Tbsp. honey, optional*


  1. In a small bowl combine garlic powder, ½ tsp. Salt, pepper, and Italian seasonings. Whisk to combine.
  2. Sprinkle seasoning ingredients over chicken breasts.
  3. Add 1-2 Tbsp. Olive oil and chicken breasts to a large skillet over medium heat. Cover and cook chicken breasts for 7-8 minutes per side, or until internal temperature reaches 165 degrees. (Check using a meat thermometer.)
  4. While chicken is cooking, combine tomatoes, red onion, basil, 1 tablespoon olive oil and ¼ teaspoon salt. Mix until combined.
  5. Once chicken is done cooking, remove from the pan and add 1 tablespoon olive oil, asparagus, and ¼ teaspoon salt. Cook for 4-5 minutes or until crisp and bright green. Add chicken back into the skillet to warm up.
  6. Serve chicken and asparagus with bruschetta topping and a drizzle of the balsamic reduction. Enjoy!
