This Greek Cucumber Salad is made with simple ingredients and is ready in under 30 minutes. Cucumbers, tomatoes, olives, onions, and feta cheese are tossed in an easy Greek dressing.
Trim the ends from the cucumber and slice it in half lengthwise. Cut into ¼” slices.
1 large English cucumber
Add the sliced cucumber to a large bowl and sprinkle with the salt. Let sit for 15-30 minutes while you prep the other ingredients. After sitting, use a paper towel to dab off the excess moisture.
½ teaspoon salt
Whisk together the oil, lemon juice, oregano, garlic powder, and sugar in a medium-sized bowl.
3 tablespoons oil, 2 tablespoons lemon juice, ½ teaspoon oregano, ¼ teaspoon garlic powder, ½ teaspoon sugar
Add the tomatoes, onion, olives, cheese, and parsley to the bowl with the cucumbers. Drizzle the dressing over top and then toss until everything is well combined. Serve immediately or store in the refrigerator for 1–2 hours to serve chilled.

How to prep ahead of time: You can prepare this entire salad a couple of hours before serving.
How to store: Keep this salad in an air-tight container in the fridge for up to 2 to 3 days. However, it will get more watery as it sits.
How to freeze: Do not freeze this salad as the texture will drastically change.
