Preheat the air fryer to 400°F. If using wooden skewers, soak them in water for at least 10 minutes.
In a large bowl, whisk together the avocado oil, Italian seasoning, paprika, salt, and black pepper. Add the chicken pieces and toss until well coated.
2 tablespoons avocado oil, 2 teaspoons Italian seasoning, ½ teaspoon paprika, 1 teaspoon salt, ¼ teaspoon black pepper, 1 ½ pounds boneless skinless chicken thighs
Thread the chicken onto the skewers, about 8 pieces per skewer. Arrange the skewers in a single layer in the air fryer basket. Cook for 5-6 minutes.
While the chicken is cooking, stir together the melted butter, garlic, Parmesan cheese, parsley, and lemon zest in a medium bowl. Flip the skewers and brush with half of the Parmesan garlic butter sauce. (It’s fine if the cheese clumps a little, just spread it out the best you can.) Cook for another 5 minutes.
Flip the skewers one last time, brush with the remaining sauce, and cook for another 2-3 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
Serve with additional Parmesan, chopped parsley, and a squeeze of fresh lemon juice, if desired.

Skewers:8-inch skewers work the best in most standard-sized air fryers.
Italian Seasoning: I used the Evolving Table Italian Seasoning when testing this recipe. Another store-bought variety can work, but you’ll want to make sure and adjust the amount of salt accordingly.
Storage: Let the chicken cool completely, then store in an airtight container in the fridge for up to 3 days.
Reheating: Air fry at 350°F for 3-4 minutes or until warmed through. You can also reheat in the microwave, but the texture won’t be as crisp.
