Place brown rice, broth, coconut milk, butter or oil and ½ t. salt in a rice cooker and cook until tender.
(You can also cook your rice the traditional stovetop method by: 1) bringing your broth and milk to a boil, 2) adding the rice, butter and salt, 3) let it return to a simmer, 4)cover, and cook for 16-20 minutes.)
Once rice is done cooking add in lime juice, cilantro and salt. Enjoy!
