Super creamy and oh so refreshing, this Frozen Mojito recipe will be your new go-to Summer drink! Fresh mint leaves are blended into the drink with fresh lime juice, coconut cream, rum and sweetener so it has a bright minty flavor that's even better than the classic cocktail.
Add lime juice, zest, sweetener, rum, mint, cream, and 3 cups of ice to a high-speed blender. Blend ingredients on medium for 1-2 minutes, or until completely smooth. Add more ice if you would like it thicker or additional water if you would like it smoother.
½ cup lime juice, 1 Tbsp. lime zest, ⅓ cup honey, ¾ cup white rum, ¼ cup finely chopped sweet mint, 2 Tbsp. coconut cream, 3 cups ice, ¼-½ cup water
Serve frozen mojito in a glass with a sugared rim and a lime wedge. Enjoy!
Notes
Prepping Ahead: Prepare the frozen mojito and place it in a freezer safe plastic container. When ready to serve, pull it out 1-2 hours in advance. Blend until smooth and to your desired consistency.
Best Blender: A high-speed blender such as a Vitamix is the best to use!
Make it a Mocktail: Simply replace the alcohol with water to make it family-friendly.
