There is just something about mini M&Ms that puts a smile on my face. Maybe it’s the bright colors? Or perhaps the fact that they’re MINI instead of regular? A few weeks ago I had the idea to make a miniature version of the Gender Reveal Cake I made almost a year ago. Instead of cake, a cupcake, and instead of regular sized M&Ms I would use the minis. After a failed attempt during round 1 (I did not cover up the M&Ms with a piece of cake and the icing stuck to all of the M&Ms!), Round 2 revealed a wonderful surprise of cascading M&Ms. Success!
These cupcakes are so much fun to make! They are rather easy to assemble with a stunning surprise when all is said and done. In the video below I show you the steps it takes to assemble these cupcakes. You can either start with cupcakes made from scratch (and use the recipe at the bottom of this page) or you can just use a box cake mix. For the buttercream frosting you can see my recipe here. Surprise M&M Chocolate Cupcakes {Video}
A unique gluten free chocolate cupcake that is full of a surprise--mini M&Ms!! An instructional video is provided along with a step-by-step picture tutorial to show you how to make these special birthday treats.
Ingredients
- ½ c. cocoa powder sifted
- ½ c. white rice flour
- ¼ c. tapioca starch
- ½ t. xanthan gum
- Or ¾ c. all purpose GF/non-GF flour instead of the above 3 ingredients
- ¼ t. baking powder
- ¾ t. baking soda
- ¼ t. salt
- ½ c. granulated sugar
- ½ c. brown sugar packed
- 3 T. butter melted
- 3 T. coconut oil melted
- 2 eggs
- ¾ c. buttermilk
- 1 c. mini M&Ms
- 1 batch Buttercream Frosting
- Sprinkles optional
Instructions
For the Chocolate Cupcakes:

Preheat oven to 350 degrees.

In a medium-sized bowl combine cocoa, rice flour, tapioca starch, xanthan gum, powder, soda and salt.

In the bowl of an electric mixer place both sugar, butter and oil. Mix for 1 minute. Add in eggs and continue mixing for another 30 seconds.

Alternatively add in dry ingredients and buttermilk, starting and ending with the dry ingredients.

Line a regular-sized muffin tray with cupcake liners. Spray with non-stick cooking spray and fill to ¾ full.

Bake in preheated oven for 18-22 minutes.
For the Surprise M&M Cupcakes:

Make sure cupcakes have cooled completely.

Using a sharp knife, cut a circle about 1 ½ inches wide (leaving about ½ inch of cake around the cupcake) in the middle of the cupcake. Make sure not to go all of the way down to the bottom of the cupcake, but instead leave a base about ½ inch thick.

Scoop out the center that you just cut and trim the top part of this piece to about ½ inch. Keep this piece for later.

Fill the hole you created with mini M & Ms. Place the piece you trimmed from above on top of the M & Ms.

Top cupcake with buttercream frosting and enjoy!

Super adorable! Made them for a school treat. Only one question…how did you keep the candy so nice…my cupcakes were thoroughly cooled, but the candies bled, like too much moisture.

So happy you liked them, DeAnn!! My M&M’s did bleed a little bit, too. Maybe next time try to pack more in? I found the ones around the edges bled the most / adhered to the cupcake, but the ones in the middle seemed to be fine!
