4th of July Fruit Pizza--Gluten Free with L.B.

I found myself in a bit of a quandary when we were in need of a potluck dish to bring to Cohl’s end of the year party.  I’m known by his fellow co-residents for my delicious desserts (after all–Cohl and I can’t eat ALL of them).  However, I knew there would already be a smorgasbord of super rich foods at the party, and did not want to be taking home 3/4 of my dish.

I thought, “I could always bring a fruit tray?  Or–a July 4th fruit pizza!”  I remembered a recipe I had concocted about a year ago for another potluck get-together, and knew it would be a quick, easy, and slightly healthy dessert to bring.

Looking at all of the fresh berries at the grocery store, it was obvious that I would be using these vibrantly colored fruits.  Before I knew it, my creation looked like the perfect July 4th dessert.  Feel free to have fun with this one and mix up the fruit!  Hope you enjoy!

4th of July Fruit Pizza

Ingredients 

  • 1 stick butter softened
  • ½ c. butter flavored shortening
  • ½ c. granulated sugar
  • ½ c. brown sugar
  • 1 ½ c. white rice flour
  • ¾ c. tapioca flour
  • 2 t. xanthan gum
  • –Or 2 ¼ c. all purpose flour instead of the above 3 ingredients.
  • 2 eggs
  • 1 t. salt
  • 1 t. baking powder
  • 1 pkg. french vanilla instant pudding mix dry
  • 1 t. vanilla
  • Fruit of your choice

Topping:

  • 6 oz. of cream cheese
  • 2 ½ c. powdered sugar
  • 3 T. pineapple preserves
  • 1 T. honey

Instructions 

  • Blend butter and shortening with sugars.
  • Sift flours with xanthan gum, salt, baking powder, and pudding mix.
  • Slowly mix in dry ingredients into butter/sugar mixture.
  • Add in 2 eggs and vanilla.
  • Grease a round or rectangular pizza pan and spread batter into it evenly.
  • Bake cookie layer at 375 for 22-26 minutes, or until edges turn golden brown.
  • While cookie is baking, beat cream cheese with powdered sugar, pineapple preserves and honey until a smooth consistency is reached.
  • Wait for cookie to cool after removing from the oven and spread topping onto it.
  • Decorate with fruit of your choice! (Strawberries, bananas, kiwi, blueberries, raspberries and blackberries work best. You can toss the bananas in 1 t. of lemon juice if the pizza will be exposed to the air for more than 4 hours in order to prevent browning.)
  • It is best to keep the fruit pizza refrigerated until ready to serve. Enjoy!
