If you’ve dabbled in the store-bought breakfast sausage world, chances are you’ve had them…

Aidell’s Chicken Apple Sausages(*chef’s kiss!*)

Months, maybe even years, went by of me purchasing these delicious links of sweet and savory goodness. 

Until it happened: I tried making them at home.

The flavors were a little tricky to nail right off the bat, but the process was so easy that I was able to recipe test them quite a few times. (I’m talking mix things together in a bowl then pop in a skillet kind of easy!)

There aren’t any artificial ingredients—only ground chicken, a few herbs and spices, real, small chunks of apples (keyword here is *small,* but I’ll go into more detail about that below!)—and NO added nitrites.

It’s the perfect balance, with a hint of sweetness and a savory flavor to kick your morning off with a bang. Especially if you’re on a low-calorie diet.

Ingredients

The simple ingredients you need to make this breakfast apple chicken sausage recipe include:

  • Chicken. Ground chicken is key, look for a 93/7 blend. If there’s too much fat, the patties will shrink. Choose organic chicken if you can.
  • Apple. You can choose just about any type of apple you have on hand. Aim for a firm apple, though. Granny Smiths work great.
  • Seasoning. A savory blend of garlic powder, ground sage, fennel seed, rosemary, cinnamon, sea salt, and black pepper creates the incredible flavor of these patties. You can also whip up your own Breakfast Sausage Seasoning.
  • Oil. Use avocado oil or olive oil to cook the patties.

How to Make Aidell’s Chicken Apple Sausage

Below you’ll find the steps to make this chicken apple sausage recipe at home:

Dice the Apple

First, prepare the apple by dicing it into very small pieces. This ensures the flavor will be evenly distributed throughout the patties.

Start by cutting straight down next to the core. Turn the apple and continue slicing until you have the core left.

Combine the Ingredients

Add all of the ingredients to a bowl.

To mix everything up, you can either use your hands or a stiff spatula. If using your hands, spray them first with oil to keep the mixture from sticking.

Stir or knead until everything is well combined.

Make the Patties

Divide the sausage mixture into 8 equal portions. Start by cutting it in half, then half again, then half one more time.

Shape each section into a patty that is about 3-inches wide and 1-inch thick.

Cook the Sausage

Add the oil to a large skillet over medium heat. Be sure to use enough oil to completely coat the bottom.

After the oil is hot, place the patties in a single layer. If they don’t all fit, cook them in more than one batch.

Allow them to cook for about 3 to 4 minutes, then flip. Continue heating for another 3 to 4 minutes, until the patties are cooked through. The cooking time will vary based on the thickness of the patties.

Place the cooked patties on a paper towel-lined plate to drain.

Serve these homemade chicken apple sausages immediately for breakfast, or even as part of a delicious dinner on a busy weeknight.

  • How to freeze: Wrap completely cooled sausage patties tightly and store them in a freezer-safe container for up to 6 months

  • Lean and mean. Choose a lean chicken blend—at least 90/10 and ideally 93/7 for the healthiest patties.
  • DIY flavor. It’s quick and easy to make your own sausage seasoning so you can customize the flavor.
  • Just a spritz. Spray your hands with some oil to keep the mixture from sticking when mixing.
  • Not too hot. Be sure the skillet isn’t too warm and there is just enough oil to coat the bottom of the pan.
  • Nice and even. Be sure to cook the patties in a single layer so they brown nicely.

  • 1 lb. ground chicken 93/7
  • 1 cup apple finely diced
  • 1 tsp. garlic powder
  • ½ tsp. ground sage
  • ½ tsp. fennel seeds
