From refreshing cocktails like a Pina Colada, Frozen Mojito, and Watermelon Rose

To healthier Fruit Smoothies and Mango Lassi recipes.

So when I started dreaming up Olive Garden’s Peach Bellini, I knew what I had to do next…

Figure out how to make it at home!

And just like the other frozen drinks I had made in the past, it was SO super easy to make…

With only 4 ingredients and in less than 5 minutes!

But don’t let the short ingredient list fool you. This creamy and thirst-quenching drink is bursting with sweet peach flavor and just enough tartness from the bubbly to balance it out.

Lucky for us, it makes enough to serve 6 so you’ll have more than enough to share at your next brunch, backyard barbecue, or July 4th picnic! Summer is the perfect time of the year for frozen drinks!

Ingredients and Substitutions

Prosecco, frozen peaches, lime juice, and sweetener are the ingredients needed for this frozen Peach Bellini Recipe.
  • Sugar. You may not need any if your bubbly is already pretty sweet. To ensure you like the level of sweetness, make the bellini without sugar first, and then adjust it to your taste preference.
  • Peaches. These must be frozen when you add them to the blender. Or, buy fresh and learn how to peel peaches, then slice them yourself. Then, check out how to freeze peaches. Of course, you can buy bags of already frozen ones, as well. Yellow or white peaches work fine.
  • Sparkling Wine. Prosecco is the best option. But, if you like sweet, look for one with a lower alcohol by volume (ABV) as it will have more sugar. If you prefer a tarter drink, look for one with higher ABV. Stick with white or rosé as a red variety will overpower the peach flavor. Be sure to chill it before adding it in so the wine doesn’t melt the frozen peaches too much.
  • Lime. Just a bit of juice is needed here. You can also use lemon juice, but it will be a bit more tart.

Step-by-step Instructions

Add ingredients to a blender.

Combine peach slices, bubbly, and lime juice to a large blender. Save the sugar until after you taste the blended drink.

It is best to let the frozen peaches sit out for about 20 minutes to thaw slightly. Or, pop them in the microwave for 20-30 seconds if in a rush.

Pro Tip: You can use any kind of high-speed blender or large food processor to make this drink. Be sure the bowl or pitcher holds at least 10 cups.

Blend until smooth.

Once everything is in the pitcher, blend for 1-2 minutes. You ultimately want to puree peaches and champagne into a smooth and creamy mixture.

Taste the frozen Peach Bellini cocktails to see if they’re sweet enough. If needed, add a small amount of sugar. Then blend again.

Garnish and serve.

Finally, pour the cocktail into a champagne flute. Garnish each cup with a sprig of mint.

What’s a Bellini made of?

Typically, Bellinis are made with two ingredients, Prosecco and peach purée. These Italian cocktails are fizzy and oh so delicious.

What’s the difference between a mimosa and a Bellini?

While both of these drinks are made with sparkling wine as a component, the other ingredients are different. A mimosa has orange juice while a Bellini has peaches.

You can make this Bellini ahead of time and store in a freezer-safe container. When you are ready to serve, remove from the freezer about 30 to 60 minutes ahead of time. Break the mixture into chunks and return it to the blender. Process for a minute or two until you get a smooth and creamy texture.

Ingredients 

  • 20 ounces frozen peaches about 4 cups
  • 750 milileters bottle Prosecco or other sparkling wine, chilled
  • 1 teaspoon lime juice freshly squeezed
  • 2 teaspoons sugar or honey

Instructions 

  • Add all ingredients to a large high-speed blender, such as a Vitamix, or to a 10 to 14-cup food processor.
    20 ounces frozen peaches, 750 milileters bottle Prosecco, 2 teaspoons sugar, 1 teaspoon lime juice
  • Blend for 1-2 minutes, or until completely smooth.
  • Serve immediately in a champagne flute with a sprig of mint and enjoy!

  • Peaches: Peel, slice, and freeze your own peaches when they’re in season to have delicious fruit ready all year!
  • Wine: Choose a sparkling wine you like the flavor of, not too sweet or dry. You will enjoy the Bellini more if you enjoy the taste of the wine.
