Those Mission taco packets, all grown-up

When I was little, Tuesday nights at our house had a very specific smell.
That orange Mission taco seasoning packet hitting hot ground beef, hard shells warming in the oven, and a head of iceberg lettuce getting shredded on the counter (which let’s be real, my 8-year-old self definitely was NOT going to be eating).
I’d sneak up next to my mom as she browned the ground beef, counting down the minutes until dinner was ready.
Now don’t get me wrong… I’m not anti-packet (there’s a reason it became a staple in basically every American kitchen in the 90s). But you know how it is. You try one as an adult and it’s way saltier than your nostalgia remembered.
This Easy Ground Beef Taco Meat is what I make instead. Same 20-minute timeline, same incredible smell filling your kitchen, but with simple pantry spices and a splash of broth to keep everything juicy.

My one tip though: double the batch. It makes incredible leftovers and even works great from frozen!

- 85/15 ground beef. This is my go-to ratio. Flavorful enough that you don’t need extra oil, lean enough that you don’t need to drain. If you’ve only got 80/20 or 90/10, both work fine, just adjust the draining accordingly.
- Yellow onion, 1 jalapeño, and fresh garlic. The aromatic base. The jalapeño is optional but it adds the slight green-chili note that makes this taste like restaurant taco meat instead of just “browned beef with spices on it.” Seed it for kid-friendly heat.
- The spice blend: cumin, chili powder, paprika, optional cayenne, salt + pepper. No oregano, no garlic powder, no fillers. A clean, balanced punch that tastes way more interesting than the packet. Skip the cayenne if your crew is spice-sensitive.
- Chicken broth (or water). This is the secret most taco meat recipes miss. Instead of tomato sauce, which can make the meat taste a little Sloppy Joe, broth keeps everything juicy and lets the spices actually shine. My personal go-to is Better Than Bouillon (chicken flavored) stirred into hot water. It’s got more of an umami flavor and rich savoriness than canned broth, plus you don’t have to open a whole carton just for half a cup. Water works fine if it’s what you have on hand.
Step-by-step Instructions
Brown the beef and aromatics
Heat a large skillet over medium heat. Add the ground beef, diced onion, and jalapeño (if using). Cook, breaking the meat apart with a spatula, for 7 to 8 minutes, until the beef is no longer pink and the onion is soft. Stir in the minced garlic and cook 30 more seconds, just until fragrant.

I love my Staub 12-inch cast-iron skillet for taco meat because the heavy bottom browns the beef really evenly and develops those golden, sticky bits that bring serious flavor. Bonus: with 85/15 beef, you don’t need to add any oil to start. The fat in the beef does all the work.
Add the spices and broth
Sprinkle in the cumin, chili powder, paprika, cayenne, salt, and black pepper. Pour in the chicken broth and give everything a good stir to coat the meat evenly.

Simmer until reduced and juicy
Reduce the heat slightly and let the mixture simmer, uncovered, for 4 to 5 minutes. You want most of the broth to evaporate but the meat should still look glossy and slightly saucy, not dry. Remove from the heat and serve.

Oops! What did I do wrong?!
My taco meat tastes bland.
Usually a salt issue. Taste it after the simmer and add a pinch more salt or another ½ teaspoon of chili powder. If you used unsalted broth or plain water, this is especially common.
My meat dried out.
You simmered too long. The broth should reduce until the meat looks glossy and just barely saucy. Once it goes past that point, the beef squeezes out its juices and turns crumbly. Pull it off the heat sooner next time, or stir in a splash more broth to bring it back.
My meat is too greasy.
You probably used 80/20 beef. Tilt the skillet and spoon off some of the rendered fat before you add the spices. With 85/15 you shouldn’t need to drain at all.
It’s way too salty.
The culprit is almost always the broth. Better Than Bouillon is concentrated, so if you used the recipe amount of base, the salt in the recipe might be too much for your taste. Next time, start with half the salt and adjust at the end after tasting.
How to store leftover Easy Ground Beef Taco Meat
Let the taco meat cool to room temperature first, then transfer it to an airtight container and refrigerate for up to 4 days.
To freeze, portion the cooled meat into freezer bags (I like to do 1- or 2-cup portions for grab-and-go taco nights), press out the air, and freeze for up to 3 months. Thaw overnight in the fridge.
To reheat: dump it into a skillet over medium-low with a splash of broth or water to loosen it back up, and stir until heated through. The microwave works too. Just cover with a damp paper towel so it doesn’t dry out.
