Almond Butter Banana Overnight Oats
We have a not-so-secret obsession in our house… almond butter!! During a normal week we consume just under 3 pounds of it. Seriously, I treat it as a dip to my magnificent Glutino pretzels 🙂
If you are no stranger to almond butter you know that this amount of almond butter can add up quickly in your bank account! (Some almond butters cost upwards of $12/12 oz.!!) Fortunately, I recently discovered that our local grocery store carries $8/pound containers of this magical nut spread. WoooHooo!!
If you happen to live in Texas, or are ever passing through, be sure to stop by a large H-E-B and pick up some of it in their bulk section. It’s ah-mazing!!
Enough about our snack obsession and now onto our new breakfast obsession…
Easy Banana Overnight Oats Recipe
Did you happen to catch the Maple & Brown Sugar Overnight Oats I posted a few months ago? Well these Almond Butter Banana Overnight Oats are simply a new rendition of those. Loads of old-fashioned gluten-free oats are mixed with almond butter, sprinkled with some brown sugar and then topped with almond butter and bananas.
Do you need to heat up these Almond Butter Banana Overnight Oats?
Actually, no! If you are not too attached to eating “hot oatmeal”, then you should totally give these a try. The magic in the “overnight” part of this oatmeal is that there is no cooking required. The oats simply soak in the almond milk while in the refrigerator and are super thick and creamy when you wake up in the morning.
A few changes you can make with these Almond Butter Banana Overnight Oats:
- Want to use unrefined sugar? You can switch out the brown sugar for coconut sugar.
- Not a fan of almond butter? You can always use peanut butter, or even Nutella!
- Don’t have any almond milk? Feel free to use regular, soy or coconut milk.

Almond Butter Overnight Oats
Almond Butter Banana Overnight Oats make a quick and easy gluten-free, dairy-free and vegan breakfast recipe for your busy mornings.
Ingredients
- 1 1/2 cups old-fashioned oats gluten free
- 1 1/2 cups almond milk
- 3 tbsp brown sugar
- 1 large banana thinly sliced
- 4 tbsp almond butter
- 1/2 tsp cinnamon
- 1/4 cup almonds, coarsely chopped optional
Instructions

This recipe will make two equal servings in 12-oz. mason jars.

Fill each mason jar with 3/4 cup oats and 3/4 cup almond milk. Stir to combine.

Sprinkle half of the brown sugar into each jar, top with half of the banana and 2 tbsp of almond butter in each.

Place lids on jars and refrigerate for at least 4 hours or up to overnight.

Before serving, sprinkle each with cinnamon and top with almonds. Enjoy!
