Some of you may know, but others may not… My hubby is not a huge meat lover.

So when I decided to create a gluten-free and Paleo turkey meatloaf I was almost certain I would be eating it all by myself.

But boy was I wrong.

When the urge to try and “hide” my most recent recipe creation kicks in, I know we have a winner on our hands.

Unfortunately, it is almost impossible to try and bury a meatloaf in a counter-depth refrigerator, so instead, we duked it out until the end… figuratively, of course.

What Makes this Ground Turkey Paleo Meatloaf Recipe a Superstar?

This Paleo meatloaf is a superstar for a few reasons:

  • It is made with lean ground turkey.
    • You can use 93/7 or 99/1.
  • It is secretly loaded with vegetables.
  • Almond flour is used in place of breadcrumbs.
  • Refined sugar-free ketchup is used.
  • Lots of yummy spices and herbs!

So in a word… this gluten-free Paleo meatloaf tastes amazing AND is super nutritious for you.

Nutrition Breakdown of this Paleo Turkey Meatloaf

There are a few incredible ingredients in this low-carb and gluten-free meatloaf recipe that make it FULL of nutrients:

  • Carrots: these orange vegetables are full of beta-carotene, Vitamin K, and fiber.
  • Almond flour: full of Vitamin E, healthy fats, and protein.
  • Paleo ketchup: is loaded with lycopene-rich tomatoes and sweetened with honey.

How Do I know when the Meatloaf is Done Cooking?

That’s a great question!

Do you have a meat thermometer?  If you don’t, you should totally pick one up.

Meat thermometers are the perfect way to check to see if meats are completely cooked without cutting into the finished product.

In this case, I like to cook my meatloaf to an internal temperature of 165-170 degrees Fahrenheit.  This ensures there is no pink meat left!

How Can You Evolve this Paleo Meatloaf?

While this ground turkey meatloaf recipe is already gluten-free, Paleo, and low-carb, there are a few other changes you can make:

  • Feel free to use gluten-free soy sauce if you are not on a Paleo or soy-free diet.
  • Use Whole30 approved ketchup and leave out the honey if you want a Whole30 meatloaf recipe.
  • Change up the spices!  Feel free to use dried oregano, basil, rosemary, or thyme instead of the Italian seasonings.

Ground Turkey Paleo Meatloaf | Gluten-Free

Ingredients 

  • 2 lbs. ground turkey 93/7
  • 1 ½ cups onion finely diced
  • 1 cup carrots thinly grated*
  • ½ cup ketchup Paleo
  • 1 egg whisked
  • 1 cup almond flour
  • 2 Tbsp. coconut liquid aminos*
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. garlic powder
  • 1 tsp. Italian seasonings dried

Meatloaf Glaze:

Instructions 

  • Preheat oven to 350 degrees.
  • In a large bowl combine turkey, onion, carrots, ketchup, whisked egg, almond flour, coconut aminos, salt, pepper, garlic powder, and Italian seasonings. Mix by hand until all ingredients are well incorporated.
  • Line a 9 x 5-inch loaf pan with parchment paper. Fill the loaf pan with meatloaf mixture.
  • For the Meatloaf Glaze:
  • Combine all glaze ingredients in a medium bowl and whisk to combine.
  • Pour glaze evenly over meatloaf.
  • Bake in preheated oven for 75-90 minutes, or until internal temperature reaches 165-170 degrees.  (You can check this by using a meat thermometer.)
  • Let meatloaf sit for 15 minutes before serving. Enjoy!  See this recipe in Meal Plan #5.

Notes

  • Grate carrots using a grating (or shredding) disc on a food processor. Store bought grated carrots will be too thick.
  • Can also use gluten-free soy sauce if not Paleo or allergic to soy.
  •  If you are keto, use no sugar added ketchup to bring the total carbs down to 13 grams and dietary fiber to 3 grams.

    So good! Have never made meatloaf without breadcrumbs and was super apprehensive but wow was I happily surprised! The carrots and almond flour worked so well to keep the loaf moist.
